Uh-oh! That's a tough one, MrChef. I was intending for Mandarin, as that is what I briefly studied in college and that is what I understand to be a dialect that most Chinese can understand, even if it's not their preferred or home dialect. However, I mostly learned in what was called (if I remember correctly) a Wade-Giles transliteration (as in my poor ni hau a ma) and DeepL uses some kind of script. I did learn to write a very few Chinese characters. But that was fifty years ago. Maybe linyubin will correct me.
