The resistors should replace the pot just fine. 1/4w size should do it. Color code escapes me at the moment but a quick Google search will tell you.
If you want to increase the amp output to the servo simply bypass the Elmo's power out put and wire in a higher capacity . This is an essential thing for rock crawlers and large vehicles with thirsty servos.
