Funny, last week for a small plates wine tasting dinner I made pan seared Dry Sea Scallops, placed a small amount of paddlefish caviar on the top of each scallop then lightly sauced over the top with warm citrus brown butter. I don't want to cook the caviar but I don't want it shockingly cold compared to the seared rare scallops.
