what wire gauge should i use to replace the wiring in my heng long pershing ?

The bulk of the wires (small stuff) is about 22 gauge or about .050. Sorry I'm not sure what you guys use in the UK. Obviously the battery and switch wires are larger. You can go larger (within reason), I use 18 gauge when I extend or modify my wiring.
