Oh yes. I run an old Lipo down to single figures % all time and it still makes huge torque. You be ok with 7v for sure

On the twin 20mm 600rpm motors i was getting 40mins using up 60% of the battery power using a 2s lipo 1000mah.

As for torque, i am going to do a video to show how much pulling/pushing power it has.
I have also provided a motor setup to Tomley's RC garage to put to the test. He will be running it on 3s, which is slightly over voltage for the motors, but extreme testing is the way to go haha.
I think i am going to run the twin 20mm in my B36 Ural Communication truck aswell, unless of course i get the larger twin motor setup developed quickly
