Hi Richard,

In Audacity with your loaded sound sample

Go to track drop down menu at top of the screen and select resample. I window will open allowing you to change the sample rate.

To save 8 bit

Go to file drop down menu at top of screen selected export. Save window opens

File name as what ever file type select "other uncompressed files" then click option button and select

header = WAV (microsoft)

encoding = unsigned 8 bit PCM

click okay and then your good to save.

It remembers the 8 bit stuff so once you've done once its done.

Great, thanks Ian. I was just saving it as "Uncompressed Files". I saw the options button, but didn't click it to see what was in there.
Initially it was saving it as a WAV(Microsoft) 16 Bit file. Have resorted to using a mouse this morning whilst using it, which made it so much easier. I'm currently running Windows 8.1 with a touch screen and trying to use Audacity like that was a bit of a nightmare !! I often wonder who thought up this invention. Touch screens might work for some applications, but there's lots that need a good old fashioned mouse.
