Good idea, you acan easily shape this material with a knife.
If you are taking it apart to build it from severals blocks, remember that sticking wooden pins in (like tootpicks or larger) is a great way to keep the pieces together!
But... It really matters how you will texture/color it. The current texture is not very stone-like. Because it's quite soft material, plaster or such will easily crack and fall off, same goes for textured paint. Spraying with a rattle can (depending on the brand) can dissolve these packaging materials.
Conclusion: make sure you have some extra pieces to practice on before you build your masterwork!
